What’s the best choice for wire in rewiring  these radios? I’ve been using 20 gauge plastic covered solid but am wondering if I’d be better off using 600 volt 18 gauge stranded

Either one is fine. Solid is easier to deal with, and AWG 20 is just fine.
I would not go below 600V insulation rating.
